Jelani likes to make his version of a raw kale salad by adding fresh lemon juice, olive oil, salt, chia seeds, vegan "bacon" bits, and fresh fruit. He got the recipie from the video Raw Foods Made Easy for One or Two People, by Jennifer Cornbleet. I like to make vegan spaghetti, by using:
Pasta of your choice.
Combine in a skillet:
1/3 c. Olive oil
2 cans of tomatoes
2 cans of tomato paste
Chop/mince:
garlic
onions
bell peppers
Add Spices (to taste):
basil
oregano
or italian seasoning
Either crushed red peppers or cayenne pepper
Salt
1 bay leaf. If you're pressed for time, use 2.
Nutritional Yeast Flakes
To Cook:
Cook, and drain pasta according to package directions. Set aside.
Sautee the onions and peppers in olive oil, add the tomatoes and tomato paste, along with the seasonings. You may want to add water, if the sauce is too thick. Cover and simmer for about 20 minutes
Afterwards, turn the sauce off/remove from heat. Sitr in the minced garlic and the TVP. Cover and allow to stand for about 20 minutes, to allow the TVP to absorb the sauce, giving it a meaty texture.
Remove bay leaf. Pour sauce onto pasta, Toss or stir pasta and sauce together. Enjoy.
*Note: you can either sprinkle the nutritional yeast onto your spaghetti, or add it to your sauce after adding the TVP. It gives the sauce a cheesy flavor, sort of a cross between cheddar and parmesan cheese.
